About The Uneducated Chef

Courtney was born and raised in New Jersey, with slight detours through Connecticut and Maryland along the way. Her fondest childhood memories all take place in the kitchen, where her family would congregate to cook, drink, share stories, laugh, drink more, and eventually eat. While she’s fully capable of whipping together everything from eggplant parmesan to strawberry shortcake to a Thanksgiving turkey that would make a pilgrim envious, Courtney most enjoys making things up as she goes along. Thanks to early training from various family members and an endless passion for reading cookbooks cover to cover, she usually gets it right.

These days, Courtney spends most of her time in her kitchen in Long Island City. She’s a culinary student, runs a fledgling catering company offering in home private chef services and cooking lessons, and enjoys shopping for kitchen gadgets and Global knives in her spare time.

    Sooo chicken, I’ve got a little something in the kitchen right now that I thought might interest you… I took a stab at a Kirsten-ized & slightly more Mediterranean version (you know – turkey bacon instead of sausage, egg whites, etc…) of Susan’s breakfast pie, & it looks bloody awesome… I’ll send photos when it’s done if you want 🙂

    here you go:

    1) Cook 6 strips of turkey bacon
    2) While that’s going, beat 11 egg whites in a bowl with fresh chopped rosemary & ground black pepper
    3) Coat the bottom & sides of a 8″ x 8″ glass pan with olive oil
    4) Cover the bottom of the pan with bread crumbs (I used Olivia’s Croutons in “Butter & Garlic” flavor & smashed them up to make crumbs…)
    5) Cut the bacon into tiny strips & cover the bread crumbs with it… Then cover the whole thing with the egg mixture
    6) Cover the egg/bacon/ bread crumbs with crumbled feta, a little shredded mozzerella & grated parmesan…
    7) Bake for 40 minutes @ 350…

    YAY! It’s just finishing right now – I’ll send a photo in a minute… WOO-HOO!
